Di Pacci — One-Off Custom Dual-Boiler Paddle Espresso Machine

La Marzocco GS3 MP Hulk Green Custom

This La Marzocco GS3 MP is a brand-new, one-off custom build in Hulk Green, finished by the Di Pacci team and the only one we've made.

The La Marzocco GS3 MP is La Marzocco's one-group home machine with commercial internals: dual boilers with dual PID control, a saturated group, a rotary pump and the mechanical paddle that lets you control pre-infusion and pressure by hand while watching the group-head pressure gauge.

This particular machine is a custom build. The body is finished in Hulk Green with 24 carat gold accents and a full Specht Design timber kit, and our team spent over four months on it. Mechanically it's a standard new GS3 MP; what you're buying on top is a machine nobody else has.

Key Features of the GS3 MP Hulk Green

🎚️ Mechanical paddle

Move the paddle to control pre-infusion and full pressure by hand, guided by the group-head gauge.

🔥 Dual boilers

A dedicated coffee boiler and a 3.5 L steam boiler let you pull a shot and steam milk at the same time.

🌡️ Dual PID

Each boiler has its own digital temperature control, so brew temperature stays where you set it.

☕ Saturated group

The group is flooded with boiler water, the same design La Marzocco uses in its cafe machines, for even heat.

🟢 One-off finish

Hulk Green body, 24 carat gold accents and a Specht Design timber kit, built by our team over four months.

💧 Tank or plumbed

Run it from the 3.5 L reservoir or switch to a mains water connection.

What the Paddle Gives You Control Of

Most machines run the pump at one pressure from start to finish. The GS3 MP's paddle opens a conical valve between the boiler and the group, so you decide how hard water hits the coffee and when.

  • Start with the paddle part-way to soak the puck at line pressure.
  • Push it across for full pump pressure once the puck is saturated.
  • Ease it back towards the end of the shot to taper pressure, watching the gauge on the group.

It turns pre-infusion and pressure profiling into a hands-on skill, which suits light roasts and anyone who likes to experiment.

Hulk Green Custom vs Standard GS3

Inside, this is the same GS3 MP as our standard listing. The difference is the finish and the fact there's only one.

Feature Hulk Green Custom Standard GS3
Mechanics GS3 MP dual boiler, paddle GS3 dual boiler
Body finish Hulk Green, 24ct gold accents Factory finish
Timber Specht Design kit Standard
Availability One unit only Stock or order
Build Custom by Di Pacci Factory

Di Pacci recommendation: Buy this one if you want a GS3 MP that's genuinely unique. Don't bother if you just want the GS3's performance; the standard La Marzocco GS3 brews identically for less.

Best Grinders for the GS3 MP

A paddle machine rewards a grinder that can make fine, repeatable adjustments.

Grinder Burrs Why it pairs well
Mahlkönig EK43 S 98 mm flat Big flat burrs give the clarity light roasts and long paddle profiles show off
Mahlkönig E65S 65 mm flat Cafe-grade on-demand dosing for a household that drinks a lot of milk coffee
Niche Zero 63 mm conical Single-dose, near-zero retention for switching between coffees

Who This Machine Is For

✓ Ideal if you:
  • Want a GS3 MP that no one else has
  • Value a showpiece finish as much as performance
  • Like hands-on pressure profiling
  • Brew and steam at the same time
  • Have bench space for a 40 cm wide, 53 cm deep machine
✗ Consider alternatives if you:
  • Just want GS3 performance; see the standard La Marzocco GS3
  • Prefer a classic finish
  • Want push-button volumetric shots rather than a paddle
  • Are new to espresso and want something simpler; see the Lelit Anna PL41
