Di Pacci — Dual Boiler Saturated-Group Home Espresso Machine

La Marzocco GS3 Coffee Machine

The GS3 shrinks La Marzocco's commercial dual boiler and saturated group into a machine that fits on a home bench.

The La Marzocco GS3 is a dual boiler espresso machine with a 1.5 litre coffee boiler, a 3.5 litre steam boiler and a saturated group, each boiler under its own PID. A rotary pump, a pre-heating system for incoming water and insulated boilers keep temperature steady from the first shot to the last, and it can run from its built-in reservoir or be plumbed in.

Choose between two versions. The AV is auto-volumetric: program a dose once and the machine repeats it. The MP uses a mechanical paddle with a conical valve, so you control pre-infusion and pressure ramp by hand during the shot. Both share the same boilers, group and steam performance, and work with the La Marzocco Home app.

Key Features of the GS3

🔥 Commercial dual boilers

A 1.5 litre coffee boiler and a 3.5 litre steam boiler let you brew and steam at the same time with café-level steam power.

☕ Saturated group

The group is filled from the coffee boiler, so brew temperature stays stable shot after shot.

🌡️ Dual PID and pre-heating

Both boilers are PID controlled, and incoming water is pre-heated before it reaches the coffee boiler.

🎛️ AV or MP control

Program volumetric doses on the AV, or shape pre-infusion and pressure by hand with the MP's paddle.

⚙️ Rotary pump

A quiet rotary pump that works from the reservoir or a plumbed water supply.

📱 La Marzocco Home app

Adjust temperature, pre-infusion, standby and volumetric settings from your phone.

AV or MP: Choosing Your GS3

Both GS3 versions share the same boilers and group. The difference is how you start and shape the shot.

  • The AV measures water through the group and stops at your programmed volume, so every shot is repeatable at the press of a button.
  • The MP has a paddle on the group: move it partway and line pressure gently wets the puck; move it fully and the pump ramps to full pressure.
  • Because the MP's conical valve opens progressively, you can stretch pre-infusion for light roasts or keep it short for blends.

Pick the AV for consistency with less effort, or the MP if you enjoy hands-on control and experimenting with each coffee.

What's in the Box

  • La Marzocco GS3 (AV or MP)
  • Portafilters and filter baskets

You'll also need a quality espresso grinder, and a water filter if you plumb the machine in.

GS3 AV vs GS3 MP

Same boilers, group and steam. The difference is control.

Feature GS3 AV GS3 MP
Shot control Auto-volumetric, programmable doses Mechanical paddle with conical valve
Pre-infusion Programmable Manual, by paddle position
Best for Repeatable shots, busy households Hands-on profiling and light roasts
Boilers 1.5 L coffee / 3.5 L steam 1.5 L coffee / 3.5 L steam

Di Pacci recommendation: Choose the AV if you want café consistency with the least effort; choose the MP if you enjoy shaping each shot. Don't bother with a GS3 if you mainly drink black coffee from one blend and never steam milk; a single boiler such as the Lelit Anna PL41 will do that for far less.

Best Grinders for the GS3

A GS3 shows up every flaw in the grind, so pair it with a grinder that matches it.

Grinder Burrs Why it pairs well
Niche Zero 63 mm conical Single-dose, near-zero retention for switching beans
Mahlkönig E64 WS 64 mm flat Low retention and flat-burr clarity for light roasts on the MP
Eureka Atom W75 75 mm flat Weight-based dosing to match the AV's repeatability

La Marzocco GS3 — Frequently Asked Questions
