The Strega is a spring lever espresso machine with modern internals: a 2L heat exchanger boiler, an electrically heated group and a pump that fills the boiler and pre-infuses the coffee for you. The V version runs from a 4L tank.

Lever machines make espresso differently. Instead of a pump holding constant pressure, a spring pushes water through the coffee and the pressure eases off as the shot runs. Bezzera, which has built espresso machines in Milan since 1901, kept that mechanism for the Strega and added the conveniences that older lever machines lack.

Declining pressure, naturally

Setup note: the Strega stands about 710mm tall and the lever needs room to travel, so check the space under any overhead cupboards before ordering. Place it on a solid bench, because pulling the lever puts real force through the machine. It is tank-fed and runs from a standard earthed power point.

Getting the best out of it

Lever machines are sensitive to grind and dose, so a capable grinder matters. Choose one from our home coffee grinders, use freshly roasted coffee beans, and adjust the grind until the lever rises smoothly over the length of the shot.

Never release the lever without a loaded portafilter locked in, as it will snap upwards with force. Use filtered water to protect the boiler, and wipe the group gasket and shower screen after each session. Do I need a separate grinder?
