Di Pacci — Multi-Boiler Pressure-Profiling Commercial Espresso Machine
La Marzocco Strada X AV Coffee Machine
The La Marzocco Strada X AV gives every group its own boiler, its own pump and a built-in scale, so each barista can brew by pressure profile or straight to a target weight.
The La Marzocco Strada X AV is La Marzocco's flagship multi-boiler espresso machine, offered here in 1, 2 or 3 group. Each group runs from its own 1.3 L coffee boiler and its own pump, with a separate steam boiler of 3.5 L, 8.2 L or 11.8 L depending on group count. Scales built into the drip tray weigh every shot as it runs.
Every group offers three brew modes. Manual mode lets the barista shape pressure with the paddle anywhere from 0 to 12 bar, Profile mode replays a saved pressure curve, and AV mode holds a set pressure until the shot reaches its target weight. That last mode is the "AV" in the name: repeatable, weight-based shots from a single button. Smart Saturation reads the flow at the group to take the guesswork out of pre-infusion.

Key Features of the Strada X AV
⚖️ Brew to target weight
Drip tray scales let AV mode stop each shot on beverage weight rather than water volume, so yields stay consistent as the grind drifts.
🎚️ Paddle pressure profiling
Manual mode gives the barista 0 to 12 bar under the paddle, and Profile mode saves that curve and repeats it on demand.
🔥 A boiler for every group
Each group draws from its own 1.3 L coffee boiler, so different coffees on the same bar can run at different brew temperatures.
🔧 Independent group pumps
Every group has its own pump, so a profile running on one group never changes the shot on the next.
💧 Smart Saturation
The machine monitors flow at the group and automates pre-infusion, reducing the puck damage that leads to channelling.
🤲 Straight-in portafilters
La Marzocco's straight-in portafilter design is easier on wrists across a long shift; ask us about this option when ordering.
How AV Mode Brews to Weight
A traditional volumetric machine measures the water going in. The Strada X AV measures the espresso coming out, which is the number your recipe is actually written in.
- You set a brew pressure and a target beverage weight for the recipe on that group.
- Press the button: the group's own pump holds that pressure while the drip tray scale weighs the cup in real time.
- The shot stops at the target weight. When a coffee needs more attention, switch the same group to Manual or Profile mode and work the paddle.
The result is shot-to-shot yield consistency across baristas and shifts, which is what keeps a dialled-in espresso tasting the same at 3pm as it did at 7am.

Di Pacci recommendation: Choose the Strada X AV if your menu changes by origin and you want each group dialled in independently with weight-based shots. Don't bother if you serve one house blend at high volume with a single recipe; the La Marzocco Linea PB AV does that job for less and is simpler to train new staff on.

La Marzocco Strada X AV Coffee Machine — Frequently Asked Questions
What does AV mean on the La Marzocco Strada X?
AV mode lets you set a brew pressure and a target beverage weight, and the integrated drip tray scale stops the shot when it reaches that weight. Manual and Profile modes are on every group too, so the barista can still work the paddle when a coffee needs it.
Does the Strada X AV have a paddle?
Yes. In Manual mode the paddle sets pressure anywhere from 0 to 12 bar during the shot, and Profile mode replays a saved pressure curve automatically when the paddle is engaged.
What power supply does the La Marzocco Strada X AV need?
It runs on 220–240 V single phase, and every group size needs a dedicated circuit. The breaker size depends on group count and element configuration, so your electrician should confirm it before installation. Contact us and we'll send the electrical details for your group size.
Does the Strada X AV need to be plumbed in?
Yes. It needs a mains water connection and a drain, and we recommend water filtration matched to your local water.
How big are the boilers on the Strada X?
Each group has its own 1.3 L coffee boiler. The steam boiler is 3.5 L on the 1 group, 8.2 L on the 2 group and 11.8 L on the 3 group.
How much bench space does the Strada X AV need?
Allow 53 cm of width for the 1 group, 83 cm for the 2 group and 103 cm for the 3 group. All three are 69 cm deep and 50 cm high, plus clearance for grinders, cups and service access.
