The La Marzocco GS3 MP Custom Baby Blue is a brand-new GS3 MP that our team has finished in baby blue with gold-plated accents and a full Specht timber kit.

The La Marzocco GS3 MP brings cafe-grade La Marzocco engineering to the home bench in a single-group machine. It has dual boilers (1.5 L coffee, 3.5 L steam), a saturated group, dual PID temperature control and a mechanical paddle that lets you control pre-infusion by hand. This unit is brand new and custom finished by Di Pacci in baby blue with 24 carat gold-plated accents and a full Specht timber kit.

MP stands for Mechanical Paddle. Instead of setting shot volumes, you move the paddle to start a low-pressure pre-infusion, then open it fully for extraction, which suits light roasts and anyone who enjoys hands-on control. The custom work is cosmetic: the boilers, group and electronics are standard GS3 MP. It is a single machine, so once it's gone it's gone.

What the Paddle Changes in the Cup

On the GS3 MP, a conical valve under the paddle controls how much pump pressure reaches the coffee. That gives you manual control of pre-infusion.

  • Paddle part-way: water reaches the puck at low pressure and wets it evenly.
  • Hold for a few seconds while the puck saturates; longer for light roasts, shorter for dark.
  • Paddle fully open: full pump pressure for the main extraction, then close to stop the shot.

Gentle pre-infusion reduces channelling and helps lighter roasts extract evenly, so you get more sweetness and less sourness from beans that are hard to dial in.
