Eureka Mignon Stark W Coffee Grinder

The Mignon Stark W runs 65mm Diamond Inside flat burrs driven by a 320W AC motor at 1650rpm, and its Instant Grind Weighing system measures the dose in real time instead of running the motor for a fixed number of seconds. It's pre-calibrated at the factory so it works correctly with any portafilter weight straight out of the box, and an 18g double dose takes around nine seconds.

What separates the W from the standard Mignon Stark is entirely the dosing system — the burrs, motor, and sound-dampened housing are shared between both models. The W adds the load cell, a larger 2.8-inch touchscreen, an oversized "King Size" grind dial, and a universal fork that holds any brand of portafilter hands-free. As a result it stands roughly 30mm taller and 600g heavier than the standard Stark to fit the weighing hardware.

Why grind-by-weight beats a timer

A timed grinder gives you the same number of seconds, not the same number of grams. That difference is invisible on day one and obvious by day ten, because everything that affects how fast coffee moves through the burrs changes while you use it: beans dry out as the bag ages, so the same eight seconds produces a heavier dose later on; a full hopper presses down on the burr chamber differently from one with only a little bean left; and roast level, density, and humidity all change flow rate every time you switch coffee.

The Stark W removes the variable rather than compensating for it, weighing the coffee during the grind and stopping at your target regardless of what the beans are doing, with an anti-vibration mount so a knocked bench doesn't corrupt the reading.

Getting the best out of it
