How to Use a Moka Pot: Grind Size, Ratio & Brewing Guide

A moka pot makes strong, rich stovetop coffee with almost no learning curve — once you know the right grind size and don't rush the pour. Often called "stovetop espresso," it doesn't actually use anything close to espresso pressure, which is exactly why getting the grind right matters so much. Here's how to brew a proper batch, plus the induction stovetop question we get asked constantly.

1. What a moka pot actually does
A moka pot brews by heating water in a sealed lower chamber until building steam pressure — typically around 1.5–2 bar — forces the water up through a coffee-filled basket and into the upper chamber. That's a fraction of the roughly 9 bar used to pull real espresso, which is why moka pot coffee is strong and concentrated, but genuinely a different drink to espresso rather than a home substitute for it. Understanding that difference is the key to not over- or under-grinding for it.
2. Grind size and coffee-to-water ratio
The right grind for a moka pot sits between espresso and drip/filter — finer than sand, but coarser than the very fine, powdery grind espresso needs. Too fine and you'll choke the pot, get little to no flow, and risk burnt, bitter coffee; too coarse and water rushes through, giving a thin, weak, under-extracted result.

Fill the basket, don't pack it. Fill the coffee basket level to the top and gently level it off — no tamping, unlike espresso. A loosely level fill is what the design expects.

Fill the water chamber to the valve, not higher. Most moka pots have a safety valve marking the fill line — overfilling can affect pressure and is a safety consideration, not just a taste one.

The ratio is largely fixed by the pot's size. Unlike espresso, you're not weighing a specific dose — you fill the basket the pot is sized for, which is why moka pots are sold in fixed cup sizes (3-cup, 6-cup, 9-cup, etc.) rather than by dose weight.

3. How to brew, step by step

Boil water separately first (optional but recommended). Starting with hot water in the lower chamber shortens time on the heat, which helps avoid the metallic, slightly burnt taste that comes from prolonged direct heating.

Fill the basket with fine-medium ground coffee, levelled but not tamped.

Assemble and place on a low-to-medium heat. A gentler heat gives a more even brew than blasting it on high, which tends to over-extract the last of the water through as steam.

Listen for the gurgle. A hissing, sputtering sound signals the water chamber is nearly empty and brewing is essentially done.

Remove from heat immediately once brewing finishes, to stop the remaining steam from over-extracting and adding bitterness.

Give it a light stir before pouring, since the coffee that comes through first and last can differ slightly in strength.
4. Does a moka pot work on induction?
Not automatically — this is the most common moka pot compatibility question, and the honest answer depends entirely on material. Induction cooktops heat cookware through magnetism, which means they only work with ferromagnetic (magnetic) metal bases. Most traditional moka pots are made of aluminium, which isn't magnetic and simply won't heat on an induction cooktop. Moka pots made specifically with a stainless steel base are usually induction-compatible, since stainless steel (the right grade of it) is magnetic.
Quick way to check: Hold a fridge magnet to the base of your moka pot. If it sticks firmly, it should work on induction. If it doesn't stick, your pot is very likely aluminium and won't heat on an induction cooktop without an induction adapter plate placed underneath it.

5. Common mistakes

Grinding too fine. The most common mistake — an espresso-fine grind chokes the pot and tends to produce a burnt, bitter result rather than a stronger one.

Tamping the grounds. Moka pots aren't designed for a compacted puck the way espresso is — a level fill is correct, tamping isn't needed and can cause problems with flow.

Leaving it on the heat too long. Once you hear the sputtering, gurgling sound, the brew is essentially finished — leaving it on longer just adds bitterness from steam pushing through an already-spent puck.

Using an aluminium pot on an induction cooktop. Not a brewing mistake exactly, but the single most common reason a moka pot "doesn't work" is simply a stovetop mismatch — check compatibility before assuming the pot is faulty.
6. Cleaning and care
Rinse all three parts (basket, lower chamber, upper chamber) with warm water after each use — most manufacturers advise against dishwashing or using detergent, since soap residue can affect flavour in future brews and some finishes don't hold up well to dishwasher heat. Let it air dry fully before reassembling and storing, to avoid trapped moisture affecting the seal gasket over time.
