GB5 3 Group — Saturated Groups

The GB5 is the machine that brought PID temperature control to espresso. Two decades on it remains La Marzocco's classically styled high-volume workhorse, built around thermal mass and serviceability rather than novelty.

The GB5 is named for Giovanna Bambi, in the same family-name tradition as the Linea PB. When it arrived in 2005 it was the first espresso machine to use PID temperature control. Before that, brew temperature wandered around a set point rather than holding at it. That single change is now in every machine La Marzocco builds, and it started here.

What the GB5 is built around

Dual boilers, saturated groups

Separate coffee and steam boilers under dual PID control, with saturated group heads so brew water is not cooling on its way to the coffee. This is the architecture the GB5's reputation for thermal mass rests on.

Saturated groups

The group is integrated into the coffee boiler rather than fed from it, so brew water is not losing heat on the way to the coffee. It is the reason the GB5 holds temperature through a rush.

Dual PID control

Coffee and steam boiler temperatures are both set and held electronically. Steam demand during milk work does not pull brew temperature down behind it.

A water sensor that tells you something

The second-generation GB5 was the first La Marzocco series to measure the conductivity and hardness of incoming water. You can see whether your filtration is still doing its job instead of discovering it via a scaled boiler.

Serviceability

The steam valve is engineered to be rebuilt from the front of the machine, and Piero group caps improve both thermal stability and volumetric accuracy. On commercial equipment expected to run for a decade or more, how easily a technician can work on it matters more than anything on a spec sheet.
