La Pavoni Cellini — Classic or Evoluzione

A prosumer heat exchanger machine built around a genuine 4kg E61 brass group head, available as the Classic with a vibration pump or the Evoluzione with an adjustable rotary pump and direct mains connection.

Both configurations share the same transversal heat exchanger boiler and 3-way solenoid valve, which keeps the puck dry after every shot for a clean back-to-back extraction. A heated cup tray uses the boiler passively to keep your cups warm, and the stainless steel AISI 304 body gives both variants a durable, long-lasting finish.

Choosing between Classic and Evoluzione

The Classic runs a non-adjustable vibration pump and is tanked only, with a single manometer showing brew pressure. The Evoluzione steps up to an interior-adjustable rotary pump and can be connected directly to your water mains straight out of the box using the included steel braided hose, with a dual manometer showing both steam and brew pressure for finer monitoring.

Both variants ship with two professional portafilters (dual and single), a plastic tamp, two filter baskets (7g and 16g), a blind filter basket, a grounds scoop and cleaning brush, and two spare grouphead rubber seals. The Evoluzione additionally includes a steel braided hose for direct water connection.
