The AV (Auto-Volumetric) control is the key difference from the paddle models. An integrated electronics package with a flow meter measures the water passing through the group, so you can program your shot volume and repeat it precisely every time — grind, tamp, press a button. Beneath the gloss white and timber sits La Marzocco's commercial hardware: a saturated brew group, dual boilers and dual PID control for the thermal stability the brand is famous for, plus La Marzocco Home app connectivity.

The Specht timber kit

Specht handcrafts timber customisation kits specifically for the La Marzocco GS3. Depending on the kit, these typically include timber elements such as a portafilter handle, a group cap, a steam toggle and a set of side panels, in wood types like American walnut, maple or American oak. Every piece is hand-finished, so wood grain varies naturally from kit to kit — no two builds look exactly alike.

AV vs paddle — what "AV" means

The GS3 comes in two control styles. The AV (Auto-Volumetric) — this machine — uses a touchpad and flow meter to program and repeat exact shot volumes for hands-off, cafe-style consistency, along with a programmable pre-infusion function. The Mechanical Paddle (MP) version instead gives manual control of pre-infusion and pressure. If you value repeatable, push-button shots over hands-on profiling, the AV is the one to choose.
