GS3 AV — Gloss white

GS stands for gruppo saturo — saturated group. The GS3 takes the brew group from La Marzocco's café machines, a solid brass block weighing several kilograms, and builds a single-group machine around it that fits on a bench.

This is not a scaled-down commercial machine or a scaled-up domestic one. La Marzocco built the GS3 specifically so the thermal behaviour of a café machine could exist in one group, and the components are the commercial ones rather than lighter equivalents.

What you are paying for

A genuinely saturated group

The group is integrated into the coffee boiler as a solid brass mass, not a separate assembly fed from it. No temperature drop between boiler and coffee, and the PID reads what the coffee is actually getting.

Programmable volumetric dosing

A keypad with up to four saved recipes plus one-shot, two-shot and continuous pour. The machine measures water through the coffee and stops at the programmed volume, so the same shot repeats without thinking about it. Pre-infusion is programmable.

A 3.5 litre steam boiler

A commercial steam figure in a single-group machine. Milk drinks back to back without waiting for recovery, and steam dry enough to texture properly rather than just heat.

Reservoir or plumbed

Run it from its tank in a kitchen or plumb it in behind a bar. The rotary vane pump is quiet and vibration damped either way, which matters more in a home than any spec sheet suggests.

Who this configuration suits

Suits anyone who wants the shot to be right without being managed — and small cafes, restaurants and roastery bars where more than one person makes coffee. The GS3 comes in exactly two configurations and the choice between them is the only real decision to make — everything else about the machine is identical, including the boilers, the group and the footprint.

Before it arrives: the GS3 needs a level, ventilated spot, water by reservoir or mains connection, and an appropriate electrical supply. Have a licensed electrician confirm your supply, and a qualified technician handle commissioning if you are plumbing it in. Allow around thirty minutes from cold to full temperature — most owners run it on a schedule rather than waiting.

Water and grinder

Water treatment is not optional on a machine with boilers this size. Fit filtration suited to your local supply and keep to a replacement schedule — scale is what ends the life of a machine otherwise built to last decades.

The grinder deserves as much thought as the machine. A saturated group holding temperature to a fraction of a degree will show up an inconsistent grind rather than hide it, so this is not the place to economise. What does GS3 actually stand for?

GS is gruppo saturo — Italian for saturated group. The name points straight at the reason the machine exists: a saturated brew group, the same design used in La Marzocco's cafe machines, in a single-group body that fits on a bench.

What makes a saturated group better than an E61?

The group is a solid brass block integrated into the coffee boiler rather than a separate assembly fed from it. There is no temperature drop between boiler and coffee, and the PID's reading tracks what is actually happening at the group. It is the single biggest reason the GS3 holds temperature the way it does.

Can I control pressure during the shot on the AV?

No. The AV programmes dose and pre-infusion, then runs the shot at pump pressure and stops at the set volume. Manual control of flow and pressure through the extraction is what the MP paddle is for. If you want to shape pressure by hand, buy the MP; if you want the same shot every time with less involvement, the AV is the right machine.

Does it need to be plumbed in?

No. The GS3 runs from its own water reservoir or can be direct plumbed, so it works in a kitchen without plumbing changes and in a cafe with them. The rotary vane pump is quiet either way.

How long does it take to heat up?

Around thirty minutes to full brewing and steaming temperature. That is the trade-off of commercial-grade thermal mass, and it is why most owners run it on a schedule through the La Marzocco Home App rather than switching it on and waiting.

Is it powerful enough for milk drinks?

The steam boiler is 3.5 litres, which is a genuinely commercial figure for a single-group machine. Back-to-back milk drinks are not a problem, and the steam is dry enough for proper texturing rather than just heating.

Can it be used in a cafe?

It is designed as a home and light-commercial machine — well suited to small cafes, restaurants, offices, roastery tasting bars and training benches. For continuous high-volume service you want a multi-group machine instead.
