La Marzocco · Commercial Espresso

GB5 S Commercial Espresso — Saturated Groups

The GB5 is the machine that brought PID temperature control to espresso. Two decades on it remains La Marzocco's classically styled high-volume workhorse, built around thermal mass and serviceability rather than novelty.

The GB5 is named for Giovanna Bambi, in the same family-name tradition as the Linea PB. When it arrived in 2005 it was the first espresso machine to use PID temperature control. Before that, brew temperature wandered around a set point rather than holding at it. That single change is now in every machine La Marzocco builds, and it started here.

What the GB5 is built around

One coffee boiler, tightly controlled

A single coffee boiler feeds all the groups under dual PID control. Stability is excellent, with the one trade-off that every group brews at the same temperature. For a bar running one espresso recipe, that is not a limitation.

Saturated groups

The group is integrated into the coffee boiler rather than fed from it, so brew water is not losing heat on the way to the coffee. It is the reason the GB5 holds temperature through a rush.

Dual PID control

Coffee and steam boiler temperatures are both set and held electronically. Steam demand during milk work does not pull brew temperature down behind it.

A water sensor that tells you something

The second-generation GB5 was the first La Marzocco series to measure the conductivity and hardness of incoming water. You can see whether your filtration is still doing its job instead of discovering it via a scaled boiler.

Keeping it running

The steam valve is engineered to be rebuilt from the front of the machine, and Piero group caps improve both thermal stability and volumetric accuracy. On commercial equipment expected to run for a decade or more, how easily a technician can work on it matters more than anything on a spec sheet.

Buying new

An unused machine as current production, with the whole of a long service life still ahead of it.

Before ordering, check the terms that apply — our Shipping, Returns & Warranty page sets out what cover applies, and it differs between new and used equipment.

Matching it to your bar

The GB5 is built in 2, 3 and 4 group configurations. Steam recovery and bar workflow usually become the constraint before group count does, so size to your layout and staffing as much as to your projected cup count.

Installation: a plumbed, high-draw commercial machine requiring a mains water connection, drainage and a suitable dedicated electrical supply. Requirements vary with configuration, so have a licensed electrician confirm your supply and a qualified technician carry out installation and commissioning.

Getting the best out of it

The GB5 will tell you about your water, but it will not treat it. Fit filtration or softening suited to your local supply and keep to a replacement schedule — on a machine with this much boiler capacity, scale is the failure mode that actually ends its life.

Pair it with a grinder that holds a setting through a full service. Temperature control this precise exposes grind inconsistency rather than hiding it. Our commercial coffee grinders range covers the options, and the wider commercial coffee machines collection is there if you are still comparing platforms.

How to order

Freight is calculated at checkout, and our Shipping, Returns & Warranty page covers delivery and returns terms. For questions on configuration or fit-out, contact our team, or see our finance options if you would rather spread the cost.

Common questions

What does GB5 stand for?

GB is Giovanna Bambi. La Marzocco's own manual describes the machine as named for her and designed with classic La Marzocco styling — the same family-name convention as the Linea PB, named for Piero Bambi.

What was significant about the GB5?

It arrived in 2005 as the first espresso machine to incorporate PID temperature control. Before that, brew temperature drifted up and down around a set point the way a household thermostat does. PID is now in every La Marzocco, and the GB5 is where it started.

What is the difference between the GB5 S and the GB5 X?

The S has one coffee boiler shared across all the groups, so every group brews at the same temperature. The X is multi-boiler: each group head has its own coffee boiler, so temperatures can be set per group. Both share saturated groups and dual PID control.

Does it have drip-tray scales?

Precision drip-tray scales come with the ABR configuration. This listing is not specified as ABR, so assume volumetric dosing unless confirmed otherwise.

What does the water sensor do?

The second-generation GB5 was the first La Marzocco series with a sensor measuring the conductivity and hardness of incoming water. It lets you see whether your filtration is still working, rather than finding out when a boiler scales up.

How many groups do I need?

The GB5 is built in 2, 3 and 4 group configurations. Steam recovery and bar workflow usually become the constraint before group count does, so size to your layout and staffing as well as your cup numbers.

What do I need in place before installation?

A mains water connection, drainage and a suitable dedicated electrical supply. Requirements vary with configuration, so have a licensed electrician confirm your supply and a qualified technician handle installation and commissioning.

Buying new?

An unused machine as current production, with the whole of a long service life still ahead of it.
